Chicken, spinach, feta and pasta bake

This is super easy, light, healthy and yummy!!! Lucy ate it up!

Here is what you need:
2-3 cooked chicken breast cut in bite size pieces.
1 tablespoon of olive oil
1/2 chopped onion
8 oz crumbled feta cheese
3 ripe medium tomatoes
1/2 cup mozzarella cheese
1-2 cups of fresh spinach
About 3/4 box of pasta of choice (use whole wheat to make this healthier)

Here is what to do:
Cook pasta according to the directions

To cook the chicken:
Cut chicken into bite size pieces and place in a pan with olive oil and onion
Season the chicken with garlic salt and pepper
Sautéed until cooked all the way thru.
Set aside

In a baking dish combine: spinach, tomatoes, and feta. Add chicken and pasta top with shredded mozzarella.

Bake at 475 about 15 minutes.




Spinach stuffed shells

Seriously one of my favorites! Lucy and I love Italian nights!

What you need:
1 package of stuffed shells
I jar (or of course homemade is better) red marinara sauce
I package of mozzarella cheese
1/2 block of fat free cream cheese (I try)
1/2 container cottage cheese, about 2 cups (much healthier than ricotta)
I egg
Fresh spinach

What to do:
Cook shells according to the directions.
In a medium sized mixing bowl mix together: cream cheese, spinach, 1/2 mozzarella, egg, and cottage cheese.
After the shells are cooked and cooled, stuff with mixture.

Top with sauce and the remaining mozzarella cheese.
Bake at 350 for about 20 minutes or until the sauce is boiling and it is heated all the way through.



Egg, Spinach and Egg Casserole

Great pre made breakfast! It is also good heated in a tortilla! Top with salsa or sour cream for a little more flavor.

What you need:
8-10 large eggs
1 package of baby spinach
1/2 package of shredded mozzarella cheese
1/2 package of shredded cheddar cheese
Salt and pepper

What to do:
In a greased baking dish place spinach as the bottom layer.
Next top with cheese.
Then add beaten eggs on top. Mix slightly.
Bake in oven @375 for 15-20 minutes or until fully cooked.



Macaroni and cheese with spinach

This is my grandma’s mac and cheese recipe but added spinach. Yes, I attempted to add nutrition to the comfort food of mac and cheese!

What you need:
1 package of macaroni or noodle of your choice
2 cans cream of cheddar cheese soup
1 package shredded cheddar cheese
1 can evaporated milk (or about 1/2 cup of regular milk)
1 garlic clove

1 cup of shredded fresh spinach (also good with out spinach)


What to do:
Cook pasta according to directions.
In a separate bowl combine all other ingredients and set aside.
In a large pan mix cheese mixture with cooked pasta.
**if freezing do now. Label and place in freezer.
Bake at 350 degrees until it bubbles.
