Chicken, spinach, feta and pasta bake

This is super easy, light, healthy and yummy!!! Lucy ate it up!

Here is what you need:
2-3 cooked chicken breast cut in bite size pieces.
1 tablespoon of olive oil
1/2 chopped onion
8 oz crumbled feta cheese
3 ripe medium tomatoes
1/2 cup mozzarella cheese
1-2 cups of fresh spinach
About 3/4 box of pasta of choice (use whole wheat to make this healthier)

Here is what to do:
Cook pasta according to the directions

To cook the chicken:
Cut chicken into bite size pieces and place in a pan with olive oil and onion
Season the chicken with garlic salt and pepper
Sautéed until cooked all the way thru.
Set aside

In a baking dish combine: spinach, tomatoes, and feta. Add chicken and pasta top with shredded mozzarella.

Bake at 475 about 15 minutes.




Turkey Burgers and oven fries

Ground turkey and ground chicken are great. It is a great and healthy substitute for ground beef. You can add anything to these burgers depending what type of meal you want–that just may be another night!


Turkey burgers

What you will need:

Hamburger buns

1-2 packages of ground turkey (depending on your crowd)

1/2 red bell pepper- chopped

Garlic salt


1/2 small white onion-chopped

1/2 package of crumbled goat or feta cheese

2 large russet potatoes

1/4 cup olive oil

What to do:

In a large mixing bowl mix it all together!

Press into patties

Sprinkle with pepper and garlic salt

**if saving for later in the week put in a freezer bag, label and date. When ready to make throw on the grill!

Top with your favorite dressings!


For the potatoes:

Cut into 1/4 inch thick round pieces

Toss in a bowl with garlic salt, pepper and olive oil

Place in oven on 450 degrees for about 30 minutes or until potatoes are soft.
