This is super easy, light, healthy and yummy!!! Lucy ate it up!
Here is what you need:
2-3 cooked chicken breast cut in bite size pieces.
1 tablespoon of olive oil
1/2 chopped onion
8 oz crumbled feta cheese
3 ripe medium tomatoes
1/2 cup mozzarella cheese
1-2 cups of fresh spinach
About 3/4 box of pasta of choice (use whole wheat to make this healthier)
Here is what to do:
Cook pasta according to the directions
To cook the chicken:
Cut chicken into bite size pieces and place in a pan with olive oil and onion
Season the chicken with garlic salt and pepper
Sautéed until cooked all the way thru.
In a baking dish combine: spinach, tomatoes, and feta. Add chicken and pasta top with shredded mozzarella.

But I have already been to the store, and I’m slightly OCD about things so everything has to be crossed off before I leave the store and in this case deleted. So my list is ready to be filled next Saturday!

Sunday:: crock pot chicken wings
Monday:: Italian chicken and pasta– yes crock pot again. (Trend?? Yes!!)
Tuesday:: BLT lettuce wraps
Wednesday:: crock pot cheddar chicken with stuffing
Thursday:: Monterey chicken
Friday:: leftovers/ eat out
We moved to KC, started new jobs, survived Christmas, now– time to cook!!
Here’s my menu this week::

Crockpot chicken wings
We always have a leftover night… That is when the hubby leaves us some 🙂
I have some new things cooking this week! AND best of all a lot of it is pre made or put together so this week should be smooth sailing. Maybe even some leftovers! You see, I make more we eat more. That doesn’t help the leftover situation!
A lot has changed at Lucy’s Diner…. The short story: it has moved to KC. Yes we made it back home! New jobs, new yet familiar city. It’s home. But we still need to eat right?! Well here it is…
Sunday: Turkey-stuffin meatloaf, mashed potatoes and green beans
Monday: White chicken lasagna– which is already made and in the fridge waiting for tomorrow!
Tuesday: Pork green chili stew– this is a crockpot meal so if things need to be chopped I do so ahead of time, and place all ingredients together so you can easily throw it together and cook all day long!
Wednesday: Tacos– shouldn’t you always have a taco night??
Thursday: chicken and noodles. Yes home made noodles, best thing ever. You will see!
We had appetizer night! I am only sharing two because the third was not so good. Sometimes I do have flops!!
What you need:
1-2 packages large mushrooms (with stems)
1 package cream cheese (I didn’t need the whole package because i was making for two!)
12 oz sausage– take out of the casing
2 tablespoons Italian breadcrumbs
1 handful of shredded mozzarella, goat cheese and Parmesan cheese.
*sometimes I do not measure very well– I blame my mom for that 🙂
What to do:
Clean the mushrooms and remove the stems. Keep the stems and chop.
Cook the sausage and drain grease.
In a mixer blend: sausage, cream cheese, stems and all cheeses.
Spoon in mushrooms
Bake or grill until lightly brown at top!
I used the oven tonight and actually used a muffin tin and they did not fall over.
A week late, sorry for the delay. Last weekend was tax free weekend which meant my normal cooking day was moved and therefor a few days late which turned into a week behind. So yes, life does happen!! Here is the menu for this week. Next week: baby food!

Well Italian with a little Mexican that is… Here is our week!
Here is the menu:
Turkey and cheese sandwich– I premake about 5-7 sandwiches with turkey, cheese, lettuce and tomato. Leave the dressing off so it does not get soggy! Put them in baggies and they are ready to go for the week!
Old fashion PB&J– put in the freezer and by the time they are ready to eat, it is still cold but thawed!
Avocado & cranberry salad
Green chili burritos
Turkey meatball sandwiches
Baked ziti A fun snack:
half and half
shredded cheddar cheese
crumbled goat cheese
crumbled feta cheese
1 package shredded mozzarella cheese
parmesan cheese (fresh is the best)
1 bag of spinach
1 yellow onion
1 small tomato
5 garlic cloves (I buy a jar of minced garlic so it does not go to waste)
fresh fruit–always easy to cut up and add to each meal
1 penne pasta
1 green enchilada sauce
1 Ortega chilies diced
1 refried beans
2 tomato sauce
1 diced tomatoes
1 package breakfast sausage
1 pork shoulder
1 pound ground turkey
1 italian sausage
chicken breast (if wanted for salad)
Off to cook!
