Lucy’s diner branched out today! My dream job would be an event planner/ catering. I would love to cook for people on their special events… So I figured why can’t I? I simply reached out to friends and family to do small events to gain experience, and here is my first one!
My mother in law is a real estate agent and was having a luncheon for some clients. I was honored when she asked me! So my Lucy and I were put to the test today! I was up at 5AM worried and making sure everything was set to leave the house by 8. Lucy in tow we headed out to deliver our first event. I managed to forget one thing, but we made it and reports are saying clients are coming back for seconds!
Carnitas (pulled pork tacos with green chili sauce)
Homemade refried beans
Berry salad with fresh mint
Mini cheese cake
Raspberry iced tea
This is one of our favorites around here! Lucy ate two tacos tonight!! It is light, healthy and pretty fabulous!
What you need:
For the fish:
2-3 tilapia filets
1 bunch of cilantro
2-3 tablespoons of olive oil
In a chopper or food processor mix: olive oil, cilantro and lime. This creates your marinade for the fish. Pour on the fish and set aside. When ready to grill, if thawed it should only take a couple minutes on each side! Fish flakes apart when cooked.
For the toppings:
1 cup of Broccoli slaw
1/3 cup Greek yogurt
1 tsp of hot sauce
Mix these three together and set aside.
1 ripe a a avocado
2 chopped ripe Roma tomatoes
I can Ortega chilies
This is super easy, light, healthy and yummy!!! Lucy ate it up!
Here is what you need:
2-3 cooked chicken breast cut in bite size pieces.
1 tablespoon of olive oil
1/2 chopped onion
8 oz crumbled feta cheese
3 ripe medium tomatoes
1/2 cup mozzarella cheese
1-2 cups of fresh spinach
About 3/4 box of pasta of choice (use whole wheat to make this healthier)
Here is what to do:
Cook pasta according to the directions
To cook the chicken:
Cut chicken into bite size pieces and place in a pan with olive oil and onion
Season the chicken with garlic salt and pepper
Sautéed until cooked all the way thru.
In a baking dish combine: spinach, tomatoes, and feta. Add chicken and pasta top with shredded mozzarella.
Happy Cinco de Mayo!! We celebrated with a very tasty Mexican feast!
White cheesy chicken enchiladas, homemade refried beans, and tortilla chips!
Here is what you need:
*These are seriously so so good*
8- 10 flour tortillas
3 chicken breast, cooked and shredded
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream (I replaced this with plain Greek yogurt)
1 (4 oz) can diced green chillies. You can also buy a fresh one and chop it!
What you do:
Preheat oven to 350 degrees. Grease a 9×13 pan
Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
Stir in sour cream and chilies. Do not bring to boil, you don’t want curdled sour cream.
Pour over enchiladas and top with remaining cheese.
Bake 22 min and then under high broil for 3 min to brown the cheese.
