Menu time

Wow, it has been a while! My Lucy is ONE!

We moved to KC, started new jobs, survived Christmas, now– time to cook!!

Here’s my menu this week::
Goat cheese, asparagus tortilini
Buffalo chicken tacos (repeat)
Turkey meatloaf and potatoes
Potato soup
Crockpot chicken wings
We always have a leftover night… That is when the hubby leaves us some 🙂

Beer cheese fondue

What you need:
2 blocks sharp of cheddar cheese
1 block sharp of white cheddar cheese
1 tablespoon of minced garlic
1 bottle of beer

What to do:
Throw it in a slow cooker!
Stir occasionally, cook for 4 hours on low.

Dippers:
Granny Smith apples (my fav!)
French bread
Soft pretzels
Red bell peppers
Fresh broccoli

Italian meatballs

What you need:
1 1/2-2 pounds ground chicken
Basil- about a handful
1 cup Italian breadcrumbs
1 egg
1 tsp minced garlic
1/4 cup fresh Parmesan (shredded)

What to do:
Mix all the above ingredients together, and roll into small balls.
Place on a cookie sheet, bake at 400 degrees for approx 12-15 minutes or until cooked.

Serve with a marinara sauce to dip.
