Chief chicken (Crockpot chicken tacos)

So… Sunday dinner. And the chiefs win! So my hubby named our dinner from their victory. Chiefs chicken it is!

What you need:
4-6 boneless chicken breast
8 oz sour cream
I can cream of chicken
1 can cream of mushroom
1 packet taco seasoning
1 can of rotel

What to do:
Put everything in the crockpot! Yes, that is all!!!

After the chicken is cooked cut into chunks or shred and put back in. Cook until it thickens. (I added a little flour to thicken it up)


Then spoon in tortillas and top with cheese and avocados.



Sweet and sour chicken

Hmmmm. Chinese!! Take out is always a good option for dinner, so why not make your own?! You most likely have it all in your fridge and pantry. No MSG needed 🙂

What you need:

3-5 chicken breast cut into cubes
salt and pepper
1 cup cornstarch
2 eggs, beaten
1/3 cup cooking oil

3/4 cups sugar
4 Tablespoons ketchup
1/2 cup white distilled vinegar
1 Tablespoon soy sauce
1 teaspoon garlic salt

What to do:
Season chicken with salt and pepper.
Cut chicken into cubes
Pour cornstarch into a large mixing bowl, add chicken and mix
When all the chicken is covered, transfer into the bowl with the eggs. Mix
Heat oil in large skillet. Cook chicken until browned.
Place in baking dish. (9×13 baking dish)
Pour sauce over evenly.

Bake at 350 degrees for 15 minutes. Turn chicken and then cook for 15 more minutes.




Grilled chicken and apple salad

This was a spin off a recipe I found. It was pretty yummy!!

What you need:
1 package of spinach
3-4 large chicken breast
1/2 package of crumbled feta cheese
1 Fiji apple diced
1 handful of sliced almonds

What to do:
Grill the chicken– I sprinkled ranch mix on it before grilling. Yum yum!!
Mix it all together

Serve with buttermilk ranch.

BLT, turkey and avocado wraps

BLT. Yes please! In a wrap, yes and yes! Although I hated blt’s as a kid they are one of my favorites!

What you need:
Bacon– I actually prefer turkey bacon but my hubby quickly. vetoed it. He says it is too healthy 🙂
Lettuce– I ALWAYS use spinach, it is the healthiest.
Tomato (in case you do not know what BLT stands for)
Your topping choice– mayo/ ranch.
Deli meat
Avocados (optional)

What to do:
Cook the bacon to your liking. In my house, the crispier the better.
After cooked and cooled, chop to smaller pieces.
Layer deli meat, tomato, lettuce, bacon and avocado. Wrap it in a tortilla!!

I served it with oven fries for dinner tonight.



Sausage stuffed shrooms

We had appetizer night! I am only sharing two because the third was not so good. Sometimes I do have flops!!

What you need:

1-2 packages large mushrooms (with stems)
1 package cream cheese (I didn’t need the whole package because i was making for two!)
12 oz sausage– take out of the casing
2 tablespoons Italian breadcrumbs
1 handful of shredded mozzarella, goat cheese and Parmesan cheese.

*sometimes I do not measure very well– I blame my mom for that 🙂

What to do:
Clean the mushrooms and remove the stems. Keep the stems and chop.
Cook the sausage and drain grease.
In a mixer blend: sausage, cream cheese, stems and all cheeses.
Spoon in mushrooms
Bake or grill until lightly brown at top!
I used the oven tonight and actually used a muffin tin and they did not fall over.
